Ingredients
- 1 15-ounce can pumpkin puree
- 1 teaspoon vanilla extract
- ½ cup Califia Farms Original Oat Beverage
- ½ cup vegetable oil
- 1 cup brown sugar
- 1 ¾ cup all-purpose flour
- 1 tablespoon cinnamon
- ¼ teaspoon cardamom
- ½ teaspoon ground ginger
- ¼ teaspoon ground cloves
- ¼ teaspoon allspice
- ½ teaspoon nutmeg
- ½ teaspoon kosher salt
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- 1 cup semi-sweet chocolate chips
Method
- Preheat oven to 350 degrees F.
- In a large bowl, whisk together pumpkin puree, vanilla extract, Califia Farms Original Oat Beverage, vegetable oil, and brown sugar, until sugar is dissolved.
- Add flour, cinnamon, cardamom, ground ginger, cloves, allspice, nutmeg, kosher salt, baking powder, and baking soda, and mix until dry ingredients are fully incorporated.
- Fold in semi-sweet chocolate chips. Spray a 9x5 pan with oil and add batter. Sprinkle with additional chocolate chips on top.
- Bake for 55 minutes to 1 hour, until a toothpick comes out clean. Enjoy!
