Ingredients

  • 1 15-ounce can pumpkin puree
  • 1 teaspoon vanilla extract
  • ½ cup Califia Farms Original Oat Beverage
  • ½ cup vegetable oil
  • 1 cup brown sugar
  • 1 ¾ cup all-purpose flour
  • 1 tablespoon cinnamon
  • ¼ teaspoon cardamom
  • ½ teaspoon ground ginger
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • ½ teaspoon nutmeg
  • ½ teaspoon kosher salt
  • 1 ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 cup semi-sweet chocolate chips

 

Method

  1. Preheat oven to 350 degrees F.
  2. In a large bowl, whisk together pumpkin puree, vanilla extract, Califia Farms Original Oat Beverage, vegetable oil, and brown sugar, until sugar is dissolved.
  3. Add flour, cinnamon, cardamom, ground ginger, cloves, allspice, nutmeg, kosher salt, baking powder, and baking soda, and mix until dry ingredients are fully incorporated.
  4. Fold in semi-sweet chocolate chips. Spray a 9x5 pan with oil and add batter. Sprinkle with additional chocolate chips on top.
  5. Bake for 55 minutes to 1 hour, until a toothpick comes out clean. Enjoy!
