Peppermint Mocha Cookies

Ingredients

1 cup + 2 tablespoons all purpose flour 

¼ cup unsweetened cocoa powder  

½ teaspoon baking soda 

½ cup dark brown sugar, packed 

¼ cup granulated sugar 

¼ teaspoon kosher salt

6 tablespoons vegan butter, melted 

¾ teaspoon vanilla extract 

1 ounce Califia Farms Peppermint Mocha Cold Brew, room temp

¼ cup vegan mini chocolate chips 

2-3 tablespoons crushed candy canes

Heat oven to 350°F. Line a large baking sheet with a piece of parchment paper

To a medium bowl, add the flour, cocoa powder, and baking soda. Whisk everything together and set aside

To a large bowl, add both sugars, salt, and melted butter and whisk to combine. Add the vanilla and Califia Farms Peppermint Mocha Cold Brew, and continue whisking until the sugars dissolve and a smooth batter forms

Sift the dry ingredients into the wet ingredients. Use a spatula to gently fold everything together. Once a dough forms, fold in the chocolate chips. Use an ice cream scooper to portion out 6 large equal pieces of dough. Roll each piece between your hands until a smooth ball forms

Dip the tops of each cookie into a bowl of crushed candy canes, then place onto the prepared baking sheet. Bake the cookies for 10 minutes, or until the edges are set, but still soft in the middle

Allow the cookies to cool on the baking sheet for two minutes, before transferring to a cooling rack to completely cool. Enjoy!
