Puff Pastry Apple Tarts
Take a (small) break from pumpkin and celebrate sweater season with these mini Apple Tarts, which take less than an hour from start to finish.

Ingredients

3 granny smith apples, peeled, cored, and thinly sliced  

¼ cup dark brown sugar 

½ teaspoon ground cinnamon 

¼ teaspoon ground cardamom 

½ teaspoon vanilla extract or paste 

1 vegan puff pastry sheet 

2 tablespoons vegan butter, melted 

1 cup powdered sugar   

½ teaspoon pumpkin pie spice 

1 ½ – 2 tablespoons Califia Farms Oat Barista Blend

Heat oven to 350°F. Lightly grease muffin cups with nonstick spray

To a large bowl, add the sliced apples, brown sugar, cinnamon, cardamom, and vanilla extract. Toss together until the apples are fully coated in the sugar-spice mixture. Set aside

Unwrap the puff pastry sheet, roll out to 9x12’’, brush with the melted butter, then cut into 12 squares. Place each square into each muffin pan cup

Fill each puff pastry cup with an equal portion of apple slices. Place in the oven and bake for 25 minutes or until golden brown and cooked through

Remove from the oven and allow the apple cups to cool for 5 minutes before transferring to a cooling rack

For the glaze, mix the powdered sugar, pumpkin pie spice, and 1 ½ tablespoons of Califia Farms Oat Barista Blend together until a thick, yet pourable glaze forms. Add remaining ½ tablespoon as needed

Pour the glaze over the cooled apple tarts and enjoy while warm!
