Veggie Flatbread Wraps
A creamy, herby spread and a hearty serving of veggies all tucked into a wrap makes this a refreshing and satisfying lunch.

Ingredients
For the herb spread:
½ medium avocado
2 tablespoons vegan mayo
1 tablespoon finely chopped fresh dill
1 green onion, chopped
1 small clove of garlic
2-3 teaspoons lemon juice
3 tablespoons Califia Farms Unsweetened Almondmilk
Salt, to taste
Pepper, to taste
For the veggie wrap:
1 lavash wrap
1-2 handfuls chopped romaine lettuce
1 small persian cucumber, sliced
½ red bell pepper, thinly sliced
Few pieces thinly sliced red onion
1 tablespoon pepperoncini

Add all of the spread ingredients to a blender or food processor and blend until smooth. Add any additional lemon juice, salt, and pepper as needed

Lay a piece of lavash on a cutting board and spread an even layer of the herb spread over the top. Save remaining spread for later use

Place the veggies on the side of the lavash closest to you in the order listed. Roll the lavash, tucking tightly as you roll. Cut on the diagonal to make two pieces, and enjoy!
